The Dealer will shuffle or 'wash' the tiles and stack them into eight stacks of four tiles each. Three dice, contained inside the Pai Gow Shaker, will be used to determine the starting position for dealing the tiles. The Dealer or Banker will shake the Pai Gow Shaker at least three times. The Dealer will uncover the dice and announce the total. How to play Pai Gow Tiles There are 32 dominoes used in Pai Gow, which are mixed or shuffled by the House Supervisor: The dominoes are placed in eight stacks of four each. The Player/Dealer and up to seven players are dealt one stack (four dominoes).
- Pai Gow tiles look very much like traditional dominoes, but the 32 tiles are arranged into various matching pairs, with different arrangements of the numbers (or pips) signifying different values. The pips on a Pai Gow tile can be either red or white, and these colorations do matter when applying an often complex scoring system.

In NJ, you can have:
1. house way right or left
2. cup say right or left
3. jung quat
4. chee yee
5. pin say right or left
6. dragon head or phoenix tail
I think that's all of them, but I could be forgetting 1 or 2.
In NJ when you are banking, you are allowed to have the dealer cut the tiles from either end, but not from the middle. In other jurisdictions they might let you do whatever, and some places let you cut and stack the tiles yourself before they shake the dice.
I've heard of some places allowing the walking down the stairs and the 'evil closes the door' deliveries, which are cool -- but I've never seen them in person.

IIRC, in Vegas I was told there are 17 different shuffles they use. Wiz, miplet, DJTB, Buehler? I'm pretty new to playing PGT.
